Asafoetida is the resinous gum extracted from one of few species of giant fennel. The spice asafoetida is most commonly found as a powder in Australia. The aroma is pungent, closely resembling the smell of fermented garlic, for this reason it is often used as a garlic substitute for those on the Low FODMAP diet or Fructose intolerant. If you are using it as a garlic replacement, we recommend substituting one clove of garlic with a pinch of asafoetida. Please note the smell will dissipate when cooked out.
