Amok Fish Curry


  • 400ml good quality coconut milk

  • 2 tbsp Spice Oddity amok curry powder

  • 25g coconut or palm sugar

  • 1 tbsp fish sauce

  • 500g white flesh fish, cut into 2cm strips

  • Banana leaves or Silverbeet leaves, stalk removed + cut into wide strips


1/ Combine coconut milk, amok curry powder, sugar and fish sauce in a bowl. Stir to dissolve.
2/ Add fish and put aside to marinate for at least 20 minutes.
3/ Line four bowls with banana leaves or silverbeet.
4/ Spoon fish and sauce into bowls.
5/ Place bowls in a steamer inside a wok with boiling water and steam until fish is cooked.
6/ Serve with rice.
