Chai Spice Cookies
95g caster sugar
3 tbsp. Spice Oddity chai spice
115g butter, melted
2 eggs, beaten
350g plain flour, plus extra for dusting 11⁄2 tsp bicarb soda
1/ Gently heat honey and caster sugar, stirring until sugar is dissolved. Remove from heat.
2/ Add chai spice and stir through thoroughly.
3/ Add melted butter and combine. Pour into mixing bowl and put aside to cool completely.
4/ In a large bowl, combine flour and bicarb soda with egg, then gradually fold into honey mixture until you have a thick dough.
5/ Turn out onto a floured surface and gently knead, adding extra flour as required.
6/ Wrap tightly in cling wrap and place in the refrigerator to rest overnight.
7/ Preheat oven to 180°C.
8/ Allow dough to rest at room temperature for 15 minutes, before rolling to 3mm thick on a floured surface.
9/ Cut shapes and bake on lined baking trays for 6 to 8 minutes, or until golden.
