SPECULAAS BISCUITS

A traditional Dutch spice blend, combining cinnamon, cardamom, nutmeg, clove and ginger.


Ingredients

2 cups Plain flour

2 teaspoons Baking powder

2 tablespoons Spice Oddity Speculaas

3/4 cup Brown sugar

2/3 cup Butter, softened

3 tablespoons Milk

METHOD

1/ Put the flour and baking powder on your clean work surface or in a bowl, make a well in the centre. Add the remaining ingredients to the centre of the well.

2/ Using your hands, combine all ingredients together and knead into a dough. Wrap the ball of dough in plastic wrap and leave to rest in the fridge for 30 minutes.

3/ Preheat the oven to 175C.

4/ When the dough is ready, roll out on a lightly floured work surface until 5mm thick. Use a cookie cutter to cut out the biscuits. If you have the traditional speculaas biscuit cutter, then lightly dust with rice flour and press into each biscuit.

5/ Place the speculaas biscuits on a baking tray lined with baking paper. Position 4cm apart. Bake for 10 to 15 minutes, allow to cool on the tray.
